Detox a little with my Potato Leek soup. Not only does it taste delicious, (even my step-daughter asked for the recipe), it has super benefits for your health as it is loaded with garlic, onions, and leeks. These veggies are from the allium family.

Allium veggies include the tear-inducing odiferous onion, garlic, shallot, leek, and chive to name some of the most common choices. There are sulfurs inside of these delights that give them their strong odor and flavor. If I am out of onions or garlic, I am store-bound before cooking my next soup, stew, curry, vinaigrette, stir-fry or salad. These are my critical mass flavorings for cooking. (Along with lemon, salt and fresh herb!)

In addition to adding massive amounts of flavor to the foods we cook, the allium family offers its consumer infinite health benefits. They are high in antioxidants and have the most potent effects on our health when eaten raw or very lightly cooked. Studies have been conducted that conclude a regular intake of these vegetables can decrease risk of certain cancers, help lower cholesterol, triglycerides, and blood pressure, decrease risks of cardiovascular disease and also have anti-inflammatory benefits. Potato Leek Soup (Vegan friendly)
Instructions
  1. Prepare leeks by removing green tops (toss or save for stock).
  2. Slice white part of leeks about 1/8th inch slices and place in a bowl of cold water to rinse. Sand will sink and leeks will float. Pull out and strain. Then pat dry.
  3. Heat oil in 4 quart soup pot.
  4. Add onion and garlic and dried leeks.
  5. Allow vegetables to soften.
  6. Peel and dice potato into 1 inch chunks.
  7. Add potatoes to pot.
  8. Pour in broth.
  9. Add water to cover.
  10. Season generously with salt and pepper.
  11. Stir and bring to simmer.
  12. Cover and allow to simmer until potatoes are VERY tender.
  13. Using an immersion blender, purée soup to desired consistency. (I like to leave some chunks).
  14. Squeeze in juice from half a lemon and taste. Add the other half if desired.
