I started my journey as a vegan on the countdown to my 50th birthday, back in June. It has been about two months and when this is posted on the 10th or 11th I will be one or two days away from my BIG birthday! So people, myself included, are asking what next? Will you remain a vegan? What do you miss?
I am honestly trying to get this all figured out as I write this since I’m facing a birthday weekend full of food-focused celebration in Asheville, NC with my hubby. I’ve booked and looked at vegetarian restaurant, vegan-friendly places and other super trendy places to eat. From the looks of things, food is both art and culture in Asheville!
So, what do I miss?
Sometimes I miss an egg for breakfast or as an ingredient.
I miss feta cheese on my salads and I miss Caesar salad.
I do not miss red meat. I am now appalled at the color of beef and the smell of raw chicken is revolting to me.
Salmon sounds good. Zaxby’s tongue torch and Chick-Fil-a spicy chicken sandwich sound tasty.
So where does this leave me?
I feel great. I’ve lost 9 pounds in 2 months. My workouts are strong.
Here are my pros and cons to remaining vegan…
- Consuming a lot of fruits, vegetables, grains, beans
- Increased fiber intake
- Very very little fried foods (occasional French fries…they’re vegan, right!)
- No fast foods
- I can easily coach my clients on the why’s and how’s of adding in more plant-based meals
- Eating out is very limited
- I’m a little tired of beans
- I have to deal with family and friends’ questions (some of which are obnoxious)
Well, it seems pretty clear from my reflections that I will or should remain on a plant-based diet. I think perhaps my “-ish” may be the answer! I’m thinking 85 or 90% plant-based and 10-15% add in some free range organic eggs, and dairy and maybe even one piece of salmon per week…. I will let you know what happens over my birthday weekend, but I hear what happens in Asheville, stays in Asheville…
